Creole Soup

What we need:

  • 1/2 cup ground pork
  • vegetable oil
  • few drops chili sauce or dash chili powder
  • 1 small green sweet pepper, chopped
  • 1 small white onion, chopped
  • 2 tablespoons butter or vegetable oil
  • 1/4 cup all-purpose flour
  • 3 3/4 cups chicken stock or water
    and chicken bouillon cubes
  • 1 (12 oz.) can tomatoes
  • 1 cup cooked rice
  • salt

Cooking Instructions

  1. Saute the ground pork in a small pan in its own fat for 5 minute-
    add few drops of oil if necessary. (This is almost dry frying.) Drain off
    any surplus fat.
  2. Add the chili sauce or chili powder.
  3. Fry the pepper and onion in the butter or oil in a large saucepan for 5 minutes.
    Stir in the flour until smooth.
  4. Blend in the heated stock, combined with the tomatoes
  5. Add the ground pork and simmer over low heat for 20 minutes.
  6. Add the cooked rice and simmer for a further 5
    Serves: 8
