Potato Pancakes

What we need:

  • 2 tablespoons all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon pepper
  • 6 medium-size (about 2 lbs.) potatoes (about 3 cups, grated)
  • fat (enough to make a layer 1/4 inch deep)
  • 2 eggs, well beaten
  • 1 tablespoon grated onion
  • 1 tablespoon minced parsley

  • 2 sprigs parsley
  • 6 to 7 pounds coarse kosher
  • 1 carrot, cut in 1-inch pieces
  • 1 medium onion, cut in quarters
  • salt
