Cream of Mushroom Soup

What we need:

  • 1/2 lb. mushrooms
  • 1/2 cup butter
  • freshly cracked pepper
  • salt
  • 3 cloves garlic, finely chopped
  • 5 cups chicken stock or water
    and chicken bouillon cubes
  • few drops Tabasco sauce
  • 2/3 cup cream
  • croutons, for serving

Eggplant

Do you know that eggplant, peppers, tomatoes, cucumbers and squash,
are really fruits? They can be white, yellowish, green, purple or purple-black
and come in a variety of shapes and sizes. You can saute, bake, roast, fry,
stuff, stir fry, steam or grill them. You can mix them with other vegetables
or with meat. Eggplant might compliment other food as a side dish, but good
enough to be a main course.

Mediterranean Salad

  • 2 tablespoons olive oil
  • 1 medium-sized onion, finely chopped
  • 1 medium-sized eggplant, peeled and cut in small cubes
  • 1 teaspoon salt
  • 1/2 cup uncooked rice
  • 1 cup water
  • 2 tablespoons ketchup
  • 2 green peppers
  • Mayonnaise Sauce (recipe follows)

Fish Fillets for Kids

It is fast and easy to fry fish or chicken fillets this way. You kids will love this finger food.
You can prepare them in advance. Serve hot or cold with salsa, sauce or dip.

What we need:

  • Fish or chicken fillets (1/4 to 1/2 inch thick)
  • Egg wash (2 eggs beaten with 1/4 c. milk)
  • Cracker crumbs
  • vegetable oil for frying
  • Salt to taste

Baked Cod in Creamy Sauce

Fish fillet baked in the oven on top of the vegetables is juicy and piquant.
As a side dish you can serve rice or just a peace of a crisp baguette.

What we need:

  • 2 pounds cod
  • 1 lemon juice
  • 2 carrots
  • 1 onion
  • 1 stem leek
  • 1 tablespoon corn/olive oil
  • heavy whipping cream
  • your favorite seasonings
  • 2 tablespoons sour cream
  • salt, black pepper, sugar
