Baked Cod in Creamy Sauce

Posted on February 17, 2008

Fish fillet baked in the oven on top of the vegetables is juicy and piquant.
As a side dish you can serve rice or just a peace of a crisp baguette.

What we need:

  • 2 pounds cod
  • 1 lemon juice
  • 2 carrots
  • 1 onion
  • 1 stem leek
  • 1 tablespoon corn/olive oil
  • heavy whipping cream
  • your favorite seasonings
  • 2 tablespoons sour cream
  • salt, black pepper, sugar

Cooking instructions:

  1. Wash fillet and pat dry. Cut fish into large chunks and add salt lemon juice to marinate; leave for 15 minutes.
  2. Wash, peel carrots and then shred it. Cut onions and leak, slice them.
Heat a fry pan in medium heat, add the oil and fry vegetables until the liquid is almost entirely gone.
  3. Brush a baking dish with oil and put carrots and onions inside.
  4. Mix seasonings, dill, basil or any other herb you like, add heavy cream, sour cream, sugar, salt, and pepper. Preheat oven to 360 F.
  5. Put cod chunks into baking dish on the top of the vegetables; pour sauce to cover. Bake approximately 25 minutes.
