What we need:
- 1 chicken (about 4 pounds)
- Salt and pepper to taste
- Juice of 1 lemon
- 1/4 cup butter
- 1/4 teaspoon paprika
- 1 cup water
- 5 medium potatoes, pared
Cooking Instructions
- Season chicken, inside and out, with salt, pepper, lemon juice, buffer, and paprika. Place chicken on a rack in a baking dish.
- Bake at 350 F about 1 1/4 hours, or until chicken is tender, basting occasionally. After the first 30 minutes of cooking, pour in water; add potatoes and baste with drippings.
- Turn oven control to 400 F. Remove chicken to a platter and keep warm. Turn potatoes over in dish. Bake an additional 5 to 10 minutes.
