Roast Chicken with Potatoes

What we need:

  • 1 chicken (about 4 pounds)
  • Salt and pepper to taste
  • Juice of 1 lemon
  • 1/4 cup butter
  • 1/4 teaspoon paprika
  • 1 cup water
  • 5 medium potatoes, pared

Cooking Instructions

  1. Season chicken, inside and out, with salt, pepper, lemon juice, buffer, and paprika. Place chicken on a rack in a baking dish.
  2. Bake at 350 F about 1 1/4 hours, or until chicken is tender, basting occasionally. After the first 30 minutes of cooking, pour in water; add potatoes and baste with drippings.
  3. Turn oven control to 400 F. Remove chicken to a platter and keep warm. Turn potatoes over in dish. Bake an additional 5 to 10 minutes.
