What we need:
- 3 boiled potatoes, sliced
- 1 1/2 cups diced cooked fish
- 3/4 cup sliced cooked cauliflower or mushrooms (optional)
- 2 hard-cooked eggs, sliced
- Salt and pepper
- 1 tablespoon flour
- 1 cup sour cream
- 1/4 cup water
- 3 tablespoons bread crumbs
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons butter
Cooking Instructions:
- Arrange layers of half the potatoes, fish, cauliflower,
eggs, and remaining potatoes in a greased 1 1/2-quart
casserole’ Lightly sprinkle salt and pepper over each layer. - Blend flour into sour cream; stir in water. Spoon over
casserole mixture. - Mix bread crumbs, cheese, and butter together. Sprinkle
over top of casserole. - Bake at 350 F 30 minutes.
