Baked Leftover Fish

What we need:

  • 3 boiled potatoes, sliced
  • 1 1/2 cups diced cooked fish
  • 3/4 cup sliced cooked cauliflower or mushrooms (optional)
  • 2 hard-cooked eggs, sliced
  • Salt and pepper
  • 1 tablespoon flour
  • 1 cup sour cream
  • 1/4 cup water
  • 3 tablespoons bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons butter



    Cooking Instructions:
  1. Arrange layers of half the potatoes, fish, cauliflower,
    eggs, and remaining potatoes in a greased 1 1/2-quart
    casserole’ Lightly sprinkle salt and pepper over each layer.
  2. Blend flour into sour cream; stir in water. Spoon over
    casserole mixture.
  3. Mix bread crumbs, cheese, and butter together. Sprinkle
    over top of casserole.
  4. Bake at 350 F 30 minutes.
