Charcoal-Grilled Fish

What we need:

  • Fish for grilling
  • 1/4 cup olive oil Juice of 1 lemon
  • 2 tablespoons oregano, crushed
  • Salt and pepper to taste

Cooking Instructions:

  1. Fish suitable for grilling are trout, whitefish, bluefish,
    snapper, or mackerel.
  2. Heat charcoal until white. Arrange grill so that it is about
    4 inches from coals. Use a hinged basket grill for easier turning; oil it well to prevent fish from sticking.
  3. Combine olive oil, lemon juice, oregano, salt and pepper.
  4. Cool on one side about 7 minutes. Turn over and cook
    an additional 7 minutes.
  5. Serve fish with remaining sauce
