Picnic Shrimp Salad

What we need:

  • 1 package softened cream cheese
  • 1/4 cup minced parsley
  • 2 teaspoons wine vinegar
  • 1/3 cup sour cream
  • 1/2 pound small, whole, cooked shrimp
  • Salt and pepper to taste
  • 3 red (or green) bell peppers
  • 2 small heads romaine lettuce

Cooking directions:

  1. In a bowl mash cream cheese and blend in parsley,wine vinegar,
    and enough sour cream to make an easily spooned mixture.
  2. Mix in shrimp; season to taste with salt and pepper.
  3. Cut peppers in big chunks and break romaine leaves. Spoon shrimp
    salad onto vegetables and eat.
    Makes 4 to 6 servings.
