What we need:
- 1 package softened cream cheese
- 1/4 cup minced parsley
- 2 teaspoons wine vinegar
- 1/3 cup sour cream
- 1/2 pound small, whole, cooked shrimp
- Salt and pepper to taste
- 3 red (or green) bell peppers
- 2 small heads romaine lettuce
Cooking directions:
- In a bowl mash cream cheese and blend in parsley,wine vinegar,
and enough sour cream to make an easily spooned mixture. - Mix in shrimp; season to taste with salt and pepper.
- Cut peppers in big chunks and break romaine leaves. Spoon shrimp
salad onto vegetables and eat.
Makes 4 to 6 servings.
