Marinated Red Pepper Salad

What we need:

  • 1 peeled and thinly sliced cucumber
  • 1 teaspoon salt
  • 2 medium-sized red bell peppers
  • 1/4 pound medium-sized mushrooms
  • 1/2 cup olive oil
  • 1/3 cup white wine vinegar
  • 1 teaspoon each basil leaves and chervil leaves, crumbled
  • 1/2 teaspoon your favorite seasonings
  • lettuce

Cooking instructions:

  1. Put cucumber in a bowl; sprinkle with salt, cover, and chill.
  2. Discard stems and seeds from peppers; thinly slice in rings.
  3. Rinse mushrooms and slice lengthwise through the stems.
    Combine peppers and mushrooms in a bowl.
  4. Mix together the olive oil, vinegar, basil, chervil, seasoned
    salt, and pepper.
  5. Pour over peppers and mushrooms. Marinate for 1 to 2 hours.
  6. To serve, arrange the cucumbers, peppers, and mushrooms on
    a bed of lettuce on the serving plate; spoon over a little of the
    marinade over top.

About 6 servings.
