Meatball soup

Every country in the world makes healthy and delicious soups. Meatball soup is one of the easiest soup to cook. My daughter loves it with toast or crackers. She counts her meatballs all the time and I have to give her the amount she asks for. It’s fun for her and us too.

  • 1 pound ground meat (chicken or beef)
  • 1 onion
  • 3 bay leaves
  • salt, pepper,
  • 1 carrot
  • 1 bell pepper
  • 1/4 cup rice

Cooking Instructions:

  1. In a large bowl mix the ground beef with salt and pepper. Shape
    the meat mixture into meatballs-you choose the size.

  1. In a medium stockpot heat the oil and cook chopped bell pepper,
    carrot and onion stirring often until golden brown. Add water, bring
    to the boil, reduce the heat and simmer for 10 minutes.

  1. Stir rice into the soup and simmer for 10 minutes.
  2. Add meatballs to the soup and simmer until they are cooked and the rice is tender ( approximately 15 minutes). Skim the fat and add salt and pepper .
