What we need:
- 2 bunches broccoli
- 2 teaspoons hazelnuts
- salt and pepper
Sauce:
- 1/2 pint whipping cream
- 2 egg yolks
- 2 teaspoons Parmesan
- 1 clove garlic
- olive oil
Cooking Instructions:
- Cut broccoli into flowerets, wash and boil them in salted water.
- Drain the flowerets and blanch in cold water.
- Mince garlic and fry it in olive oil. Remove the garlic.
- Whisk whipping cream and egg yolks and add to the oil.
- Stir slowly for 2-3 minutes, add Parmesan and spices.
- Fry hazelnuts, sprinkle on broccoli and pour on prepared sauce.
Serve 4
