Broccoli with Hazelnuts in Butter Sauce

What we need:

  • 2 bunches broccoli
  • 2 teaspoons hazelnuts
  • salt and pepper

Sauce:

  • 1/2 pint whipping cream
  • 2 egg yolks
  • 2 teaspoons Parmesan
  • 1 clove garlic
  • olive oil

Cooking Instructions:

  1. Cut broccoli into flowerets, wash and boil them in salted water.
  2. Drain the flowerets and blanch in cold water.
  3. Mince garlic and fry it in olive oil. Remove the garlic.
  4. Whisk whipping cream and egg yolks and add to the oil.
  5. Stir slowly for 2-3 minutes, add Parmesan and spices.
  6. Fry hazelnuts, sprinkle on broccoli and pour on prepared sauce.

Serve 4
