Mexican Bean Salad

What we need:

  • 2 cans red beans
  • 1 avocado
  • 2 tomatoes
  • 1/2 can corn
  • 2 tablespoons lemon juice
  • olive oil
  • salt
  • pepper
  • parsley

Cooking Instructions:

  1. Peel avocado and cut in cubes. Cut tomatoes, mix with avocado,
    drained corn and red beans.
  2. Lemon juice whisk with olive oil, add salt and pepper.
  3. Pour over prepared salad and sprinkle parsley on the top.

Serve: 4
