What we need:
- 2 cans red beans
- 1 avocado
- 2 tomatoes
- 1/2 can corn
- 2 tablespoons lemon juice
- olive oil
- salt
- pepper
- parsley
Cooking Instructions:
- Peel avocado and cut in cubes. Cut tomatoes, mix with avocado,
drained corn and red beans. - Lemon juice whisk with olive oil, add salt and pepper.
- Pour over prepared salad and sprinkle parsley on the top.
