Asian Pear Salad


What we need:

  • 1/2 cup cottage cheese
  • 1/2 tablespoon fresh lemon juice
  • 1 tablespoon chopped pecans
  • 2 medium Asian pears, sliced
  • lettuce leaves

Cooking Instructions:

  1. Combine cottage cheese and lemon juice in a bowl; add pecans.
  2. Sprinkle some lemon juice over pears to prevent browning.
  3. Put pear slices on lettuce, add cottage cheese and pecan mixture on top.
  4. Chill before serving

Couscous Salad with Cucumbers, Olives and Feta


  • 1 cup couscous
  • salt
  • 1 1/4 cups very hot water
  • 1/4 cup finely diced red onion
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons finely chopped oregano
  • 1 tablespoon drained small capers, finely chopped
  • 1 garlic clove, minced
  • 1/4 cup extra virgin olive oil
  • 1 medium cucumber peeled seeded and cut
  • 1/4 cup chopped mixed olives
  • 3 large romaine lettuce leaves, chopped
  • pepper
  • 1/2 ounces feta cheese, crumbled

What we need:

  • 2 tablespoons fresh lemon juice
  • 2 tablespoons grated lemon zest
  • 1 1/2 chopped rosemary
  • 1 garlic clove chopped pepper, salt

  • 1 pint grape tomatoes
  • 1 medium cucumber
  • 1/3 cup black olives
